Shaved Organic Brussels Sprouts with Shiitake Mushrooms.
I love brussel sprouts. To maintain a healthy balanced immune system, we need to have between 2 and 3 cups of sulfur reach vegetables a day, and brussel sprouts are a great way to get there.
Even my kindergardner loves them roasted.

These sprouts are the perfect side dish for any meal! They’re simple and easy to prepare, and best of all: packed with nutrient-dense vegetables.
Shaved Organic Brussels Sprouts with Shiitake Mushrooms
Brianne Williams, RD, LD
Serves 2-4
Ingredients:
- 1-12 ounce package organic Brussels sprouts
- 2 tablespoons fat (coconut oil, bacon grease, olive oil)
- ½ yellow onion, minced
- 1-2 cloves garlic, minced
- 1-1 ½ cups shiitake mushrooms
- ½ teaspoons sea salt
Wash Brussels sprouts and remove stems. Shave sprouts with a food processor or slice thinly. Heat oil in large pan over medium heat. Add onion and let soften for 1-2 minutes. Add garlic and cook until onions are translucent. Add Brussels sprouts and cook for about 2 minutes. Add mushrooms and sea salt. Cook until sprouts and mushrooms are soft.

Ok, I get it we need 2-3 cups of sulfur reach veggies a day, but why did it have to be in brussel sprouts! 😉
LOL 🙂 variety is very important! Also one of the principals of my work, and I share it with Dr Terry Wahls, is that we must consume 6-9 cups of three vegetable groups a day, sulfur is just one of those three groups.
To have the biggest chunk of my nutrients come from vegetables, I choose to take sulfur from veggies rather than legumes or nuts, or meat for that matter. I find that I eat plenty of those as is, but vegetables is something we all could have more off 🙂
I have a client who loves broccoli and she eats them everyday! Well, in her case she has to rotate now, with broccoli allowed only ones a week.
